High Protein Chili

1. Place a pot over medium-low heat. Add 1/2 tbsp olive oil, 1 cup diced onion,  1 cup diced pepper, and 15 oz 95% lean 5% fat raw ground beef. Cook for 6-8 minutes or until meat is cooked through.

2. Add 1 cup chopped sweet potato,  20  oz crushed tomato, and  1 1/2 cup veggie broth. Next, add 1 tbsp Chili powder, 1 tsp garlic powder, and 2 tsp ground Cumin to the pot. Boil for 25 minutes or until the potatoes are soft.

3. Use a potato masher or whisk to crush the potatoes, thickening the chili slightly. Serve with 1/4 cup diced cilantro on top.


Notes:


Recipe makes 2 servings (double to increase serving size)

Total prep time is 45 minutes
